Super Nachos

Look at that beast. Just take a moment and look at it. In that gooey pile of nacho goodness rests a quarter bag of tortilla chips, several handfuls of shredded Mexican cheese, three quarters of an avocado, a heap of sour cream, and a whole can of refried beans.

This, folks, is a still-sizzling plate of super nachos, whipped up by yours truly.

Believe it or not, I ate the entire thing last night... I guess that's why I wasn't hungry for breakfast this morning (or lunch, for that matter).

That's all I have to say for now - good stuff!

    But seriously, that’s both awesome and disturbing at the same time. In your last post you mentioned you lived within partying range of Fremont . . . any specifics on the name of the humble taqueria that serves this, for the edification of your fellow Californians?

  • Haha, pretty much! :D

    I used to get some really good super nachos in Stockton, from a place called ‘Viva!’ The nachos pictured above, however, were made by me!

  • Oh, and the Fremont I mentioned is Fremont, WA, but I am also within partying range of Fremont, CA when I’m back home at my apt. Sorry for the confusion!

    I also did not know there was a Fremont in Washington . . . I guess I totally confused two of your posts. Brilliant of me. I live on the peninsula side of SF Bay, so I rarely know what’s happening in Fremont, CA.

    And yeah, California really is burning. Over a thousand tiny, smokey fires filling the air with an unnatural dull gray haze. On the plus side, all the smoke has floated up to the cloud layer and is now, ironically, reflecting away the humid summer heat.

  • Yeah, the 4-5 days of smoke were really bad… it made my lungs wish for a gulp of fresh air, and my eyes burn towards the end of the day. I’m kind of glad it’s keeping us cooler now, but I’d rather have had the whole thing not happen to begin with.

    The good thing is that I missed out on the hottest CA days while I was in Seattle… hopefully it doesn’t get that hot again.

    Well, it’s California. We get a week of summer, a day or two of spring, two weeks of winter, a few days of fall, another week of summer . . .

    And yet my tennis training has the inexorable ability to fall on the hottest days of the year, never fail. At least the wind blows most of the low-lying smoke over to the East Bay, so we don’t really have many air quality issues here in San Mateo county.

    Haha, when I read Fred’s last post without reading the one before it I was like “Oh god no, Fred started smoking…”

    And now I’m mad you didn’t share those nachos. That looks so damn good. Make some more and send them over here to NY.
